As an example, the picture on the left is the breakdown of a lamb from Grassy Meadows Farm. This is what it looks like about to go in the box. A few numbers: hot hanging weight was 78# (at 52%, we estimate a live weight of 150#), the in the box/your freezer weight is 50# and is comprised of a mix of two boneless legs, bone-in neck, rib and loin chops, two pairs of shanks and the remainder in grinds (about 20#). This particular lamb was sold for four dollars a pound hanging weight, that translated to $312 for the lamb and then the customer paid $75 to the plant for processing. Translation, about $7.80/# in your freezer. Price varies by supplier.
